1 package of Quaker Oatmeal Muffin Mix (regular or low fat)
2 Tablespoons of Canola Oil
3% Milk (add to mix until you get a sticky cookie consistency where you can spoon out a ball and place it on a cookie sheet – add some mix, add more mix etc.)
1 package of milk chocolate chips
Add the Muffin Mix, Oil and Milk together using a spoon to mix (not a blender).
Once it is blended and has a thick cookie dough consistency add the chocolate chips.
Mix together and if it’s too thick add just a few more drops of milk.
Butter your cookie sheet and spoon about a tablespoon of the dough for each cookie – around three cookies to a row.
Bake at 350F for 12-15 minutes. Check at about 10 minutes because it depends on your oven. When cookies are golden brown around the edges, test it with a tooth pick if it comes out clean they are done. Take out of the oven and let them sit on the cookie sheet about 5 minutes before placing on paper towels to cool.
Make sure the cookies are all cool before placing in a cookie jar because they will stick together if they are not cooled.
Makes about three full cookie sheets of cookies.
Raisins instead of Chocolate:
Add a sprinkling of Cinnamon (approx. 1/4 teaspoon )
Nuts can be added to both Raisins or Chocolate, or all three can be added but when using chocolate do not add cinnamon.
ENJOY !
